A large number of people around the world have the habit of thoroughly washing the chicken under running water before roasting it. Everyone thinks they are doing the right thing and that they are protecting themselves and other diners from infection.

A professor from Drexel University never washes the chicken before roasting it. Why?
Salmonella and Campylobacter are already in the chicken, therefore rinsing with water simply won’t help at all. By washing the chicken, you only spread bacteria across the kitchen counter and onto yourself.
False sense of security
After washing the chicken we only have a false sense of security against infection. However, if your conscience won’t allow you to leave the chicken uncleaned, simply take damp kitchen towels and carefully clean the chicken.
