Lilac syrup

We need:

20 sprigs of lilac (preferably when the flowers are not fully open, that’s when the syrup is best)

1 liter of water

750 g – 1 kg granulated sugar (you can also use cane syrup)

30 g citric acid

1 lemon, thoroughly washed and sliced into rounds

Instructions:

From the flowers we only need the petals – they must simply be stripped from the sprigs – it’s laborious, but it’s worth it.

Put the water and sugar on the heat – bring to a boil and simmer on low heat for about 5 minutes. Then add the citric acid and the sliced lemon. Prepare about a 3-liter container, put the blossoms into it and pour in the sugar syrup. Let macerate for 3 days in a cool room, then strain and pour into clean vessels. Store in a cool place. If you want to extend the shelf life, add a pinch of sorbic acid.
