Elder syrup for winter
It is wonderful for winter in tea, or in summer for a refreshing lemonade. This is how our grandmother used to make it.
we need: - 45 larger flower heads
- 3 lemons
- 2 kg sugar
- 2 liters of water.
procedure:
Wash the elderflowers one by one. Put the sugar in a pot and add the water, cook over low heat until the sugar dissolves. Bring to a boil, remove from the heat, add the juice of two lemons (if you have organic lemons, you can add them with the peel). When the syrup is lukewarm, add the washed flowers, then cover the container and place it in the refrigerator for 4 days. During this time stir the syrup several times. After 4 days strain the syrup, pour into sealable jars and sterilize. Store the syrup in a cool place.
