You will need:

  • approx. 8 elderflower blossoms
  • 1 lemon
  • 1 orange
  • 2 tbsp honey
  • approx. 3 liters of water

Optional: mint, lemon balm, thyme

Method:

On a sunny day, choose a beautifully blooming black elder bush in the garden or another clean area.

Cut off approximately 8 larger flower clusters.

Remove the coarse stems from the flowers and, without rinsing, place them into a 3.5-liter jar.

You can (but don’t have to) add a handful of young lemon balm shoots, or mint or other suitable herbs to taste.

Thoroughly wash the lemon and orange (whose peels are not chemically treated), slice them and add to the elderflower.

Add two tablespoons of honey to the jar. I have honey from my neighbor, so the honey is basically from my flowers.

Fill the jar with water, ideally spring water or at least filtered.

Cover with something breathable so the contents can breathe, place in a sunny spot and let it charge in the sun for the whole day (or place on a windowsill for 24 hours). Note: In full sun, 6 – 8 hours is enough, don’t overdo it.

After steeping, pour through a sieve; you can gently squeeze the mass.

Store in the refrigerator and consume preferably within 24 hours.
