Fantastic homemade strawberry syrup that you make from just 1 cup of strawberries.
From this amount you will get 2 liters of amazing syrup without chemicals and E-numbers.
We need:
- 1 cup of strawberries (250 ml) – domestic or wild
- 80 strawberry or lemon balm leaves
- 850 ml of water
- 1 tablespoon of citric acid
- 1 kg of sugar
Procedure:
Put the strawberries, water and leaves (I tear the young ones, so we use more of them because they are smaller, but if there are more, that’s fine), all into a pot and let it simmer for 10 minutes after it comes to a boil. Then strain through cloth and squeeze well.
Add sugar and citric acid to the juice from the strawberries and leaves and cook for about 8–10 minutes.
Then fill into bottles through cheesecloth (ideally those that previously contained alcohol) and cork. There is no need to sterilize – the sugar and citric acid will ensure the syrup keeps and doesn’t spoil. I mostly fill into alcohol bottles; do not rinse them. After a longer time it may start to gel a bit, but just shake the bottle and it’s perfect again. The syrup is excellent, it smells and tastes beautifully of strawberries. From this amount we have 1.5 l of perfect homemade syrup. We use it for lemonades and sweetening like a classic syrup – you really need very little, the syrup is sweet and delicious.
