For the medicinal elder syrup we need:

  • 6 organic lemons

Instructions:

  • Pick the elderflowers from places that are not dusty – ideally away from roads and on a sunny day.
  • Hand-sort the elderflowers, and place only the flower clusters without the green parts into a large jar.
  • Pour water over the flowers so they are submerged, add the lemons sliced into rounds and cover the jar with gauze or a clean cloth. Let it steep for at least 24 hours in a dark and cool place.
  • Then strain the elderflowers and squeeze out all the juice from the flowers and lemons and pour into a pot.
  • Add the lemon juice from the remaining lemons (strain through a sieve), add the honey and bring the syrup to a boil over low heat.
  • Boil for 5 minutes and then carefully pour the syrup into warm sterilized jars.
  • Seal well and leave wrapped in a blanket / towel to cool completely.
