Excellent homemade syrups from ingredients that you have available right now – try the elder, rhubarb or lavender one.

Syrup from black elderflowers – for fever and stomach pain

It is said that elderflower is one of the most medicinal plants in the world, as it contains large amounts of flavonoids, carotene and vitamin C.

It has long been known to be very helpful with influenza, blocked sinuses, bronchitis, asthma and allergies. It also boosts immunity and helps with diabetes and constipation.

How to proceed?

Excellent, very tasty recipe for sugar-free elder syrup. It is not only excellent for flavoring lemonades, cakes and desserts.

For the medicinal elder syrup we need:

  • about 35 elderflower blossoms
  • 1,5 l of boiled and cooled water
  • 900 ml acacia honey
  • 6 organic lemons

Instructions:

  • Pick elderflowers in places that are not dusty – ideally away from roads and on a sunny day.
  • Hand-sort the elderflowers, and place only the flower clusters (without green parts) into a large jar.
  • Pour water over the flowers so they are submerged, add the lemons sliced into rounds, and cover the jar with gauze or a clean cloth. Let steep for at least 24 hours in a dark, cool place.
  • Then strain the elderflowers and squeeze out all the juice from the flowers and lemons and pour into a pot.
  • Add the lemon juice from the remaining lemons (strain through a sieve), add the honey and bring the syrup to a boil over low heat.
  • Boil for 5 minutes and then carefully pour the syrup into warm sterilized jars.
  • Close well and leave wrapped in a blanket / towel to cool completely.

Store in a pantry in a dark place, and after opening store it in the refrigerator. You don’t have to use elderflower syrup only in lemonades; it is also an excellent sweetener for cakes and no-bake desserts.

Medicinal lavender syrup – a remedy against bloating

  • helps with bloating and digestive problems,
  • relieves migraine and headache,
  • positively affects the functioning of the digestive and excretory systems,
  • supports natural digestion and bile production,
  • benefits intestinal function,
  • calms and helps you sleep better – take a teaspoon before bed, or a glass of lavender lemonade,

  • an amazing flavoring for foods and drinks.

We need:

  • 1,5 l of water
  • 700 g – 1 kg sugar (granulated or cane)
  • 30 g citric acid
  • 100-130 g finely chopped lavender flowers
  • 1 lemon (well washed)

Instructions:

  • Put the ingredients (except the lemon) into a pot.
  • Pour 1,5 l of boiling water over them.
  • Stir until the sugar is completely dissolved.
  • Add the sliced lemon.
  • Cover with gauze, secure it with a rubber band and let stand for two days at room temperature, away from direct sunlight.
  • Stir every day.
  • Then strain and store in glass bottles.
  • Use it to prepare lemonades, teas, or to pour over desserts like pancakes!

Recipe for excellent rhubarb syrup

Rhubarb is rich in calcium necessary for bone building and important for women in menopause.

For preparing the syrup we need:

  • 1 kg rhubarb
  • 4 cups of water
  • 8 cups of sugar

Procedure:

  • Wash the rhubarb, peel it and cut into 2 cm pieces.
  • Pour it into a pot with water and bring to a boil.
  • Simmer it for 20 – 30 minutes, then blend it.
  • Strain through a sieve back into the pot and heat again.
  • Add the sugar. Boil for 5 minutes.
  • Put the hot syrup into clean jars, close and turn upside down.
  • Let cool and then store in a cool, dark place.

When serving, mix with water and ice. It is also excellent for sweetening desserts.
