We need:

  • approx. 8 elderflower blossoms
  • 1 lemon
  • 1 orange
  • 2 tbsp honey
  • about 3 liters of water
  • optional: mint, lemon balm, thyme

Procedure:

  • On a sunny day, choose a beautifully blooming black elder bush in the garden or another clean spot.
  • Cut off approximately 8 larger flower clusters.
  • Remove the coarse stems from the flowers and, without rinsing, place them into a 3.5-liter jar.
  • You can (but don’t have to) add a handful of young lemon balm shoots, or mint or other suitable herbs to taste.
  • Thoroughly wash the lemon and orange if their peel has not been chemically treated, slice them and add to the elderflowers.
  • Add two tablespoons of honey to the jar. I have honey from my neighbor, so the honey is actually from my own flowers.
  • Fill the jar with water, ideally spring or at least filtered water.
  • Cover with something breathable so the contents can breathe, place in a sunny spot and let it charge in the sun all day (or place on a windowsill for 24 hours). Note: In full sun 6–8 hours is enough, don’t overdo it.
  • After steeping, strain through a sieve, you can gently squeeze the mass.

Store in the refrigerator and consume preferably within 24 hours.
