There is no doubt about the great health effects of walnuts. Everything can be used – leaves, fruits and shells. And you certainly don’t have to wait until autumn, when the walnut kernels ripen. Collect the green fruits too and make delicious treats full of health from them at home.

Green walnuts are not only a true delicacy, but are also exceptionally healthy.

You can make syrup, jam, compote, liqueur or even a decoction from them. They contain a large amount of vitamin C. They positively influence a number of things. They are a great immune booster, they work against fatigue and depression, detoxify the body, strengthen the liver and stomach, cleanse the blood and the lining of the esophagus and also support the elimination of heavy metals. They also help with hypothyroidism, sore throats and respiratory problems.

But green walnuts are good to consume not only for their health-promoting properties, but also for culinary experiences: they are a perfect side dish to meat, as an ingredient in vegetable salads, and they are also excellent in fruit salads.

This homemade drink contributes to the proper functioning of the thyroid gland, improves the blood count, helps with sore throats, respiratory diseases and at the same time removes extra pounds. And it only takes two ingredients!

We need:

  • 40 young green walnuts
  • 1 jar of homemade honey

Method:

  • Wash the green walnuts with the shell on and then gently score the shell or prick it several times.
  • Then take a preserving jar and put them into it.
  • Pour honey over them and place in the sun. The mixture should stand for 40 days. Then the drink is ready.
  • Take 1 tsp in the morning / on an empty stomach /, the nuts will break down, release juice, and the consistency will be like syrup.

Compote of green walnuts

For an excellent compote of green walnuts you will need the following ingredients:

  • 1 l of water
  • green walnuts
  • 2 kg of sugar
  • cinnamon
  • cloves

Method:

Wash the unripe green walnuts, pierce them densely with a needle, pour cold water over them and let them macerate for 14 days. Change the water daily. By the end of maceration the shell of the nut should be brown to dark brown. Strain the nuts, let them drain and boil them in water. Then let them cool in cold water and drain. Pack the nuts into jars, pour hot syrup over them (boil 1 l of water with 2 kg of sugar), optionally add a clove or cinnamon for flavor and seal. Place them in a canning pot with hot water and sterilize by heating to 95 ° C for 20 – 40 minutes (jars 0.7 – 0.9 l – 60 minutes, jars 0.5 l – 50 minutes). After finishing, cool the jars. Nuts are added to compotes for decoration; they have an excellent unforgettable taste.
