The warm summer months are perfect for enjoying light vegetable dishes. The season for tomatoes, cucumbers, peppers, squashes, and eggplants is in full swing, so it’s a good idea to prepare a tasty and quick lunch or dinner from these kinds of vegetables. We have a great tip for a vegetable salad with chicken that will truly amaze you.

What ingredients will you need to make the salad?

Before you start preparing the salad, get these ingredients:

  • 200 grams of fried chicken (from chicken breasts)
  • 400 grams of fresh eggplants
  • 200 grams of fresh tomatoes
  • 200 grams of bell peppers

You will also need: 1 onion, 3 boiled eggs, 20 grams of fresh herbs (especially dill and parsley), 150 grams of mayonnaise and 4 cloves of garlic. You should also prepare a marinade for the onion from a teaspoon of sugar, half a teaspoon of salt, a tablespoon of vinegar and 200 milliliters of hot water.

How to proceed when preparing the vegetable salad with chicken?

Season the chicken, ideally the breasts, with salt and pepper, then coat them in the classic breading (plain flour, egg, breadcrumbs) and make a schnitzel. Fry it in sunflower oil until golden on both sides. Place the finished fried meat on an absorbent paper towel and blot off the excess fat. Then you need to marinate the onion: peel it, cut it into smaller pieces and put it into a pot. Then add the sugar and salt, pour in the vinegar and the boiled hot water. Marinate the onion in the brine for at least a few hours. It should ideally be kept cool. Meanwhile, take a large bowl and put in the washed, cleaned and chopped peppers together with the tomatoes. Add the chicken schnitzel, cut into strips or cubes, to the vegetables. Finally, press the garlic into the mixture, add the marinated onion and drizzle with mayonnaise. Mix and serve chilled with a fresh piece of bread (baguette, roll, or bun). Enjoy your meal!
