Russian ice cream is a very simple and popular treat that you can make at home with just two ingredients that form the cream and sweet wafers. This way you’ll be sure there are no chemical additives in the sweet, and it tastes great besides. The ice cream only takes a few minutes to prepare and will keep for quite a long time (that is, unless the kids dive in immediately). You will surely fall in love with this recipe.
What you will need and how to make the ice cream
For homemade Russian ice cream, prepare:
- 500 ml whipping cream with a high fat content (30-36%)
- 200 g condensed milk
- 2 wafers
The process of making the ice cream then consists of the following steps:
- Before processing the ingredients, everything needs to be thoroughly chilled so that the cream whips well and stays firm. Put both the whipping cream and the condensed milk in the refrigerator, and also pre-chill the bowl in which you will whip the cream.
- After chilling, pour the cream into the pre-chilled bowl and whip on full power for 5-7 minutes, until it becomes completely firm.
- Once the cream reaches a thicker consistency, reduce the mixer speed to minimum and begin slowly pouring in the condensed milk (while continuing to whip).
- Fold in the condensed milk until the ice cream has a uniform consistency.
- Prepare a rectangular plastic container with a sufficiently sized base that will be used to shape the ice cream – you need to use a container that can withstand low temperatures – ideally the container that previously held frozen foods (washed).
- Place a wafer on the bottom of the container (if the size differs, trim the wafer).
- Pour the prepared ice cream cream over the wafer and cover it with the second wafer.
- Place the ice cream in the freezer and let it chill for 4-6 hours.
After freezing, the ice cream can be portioned in different ways (into squares or rectangles). Once you taste it, you won’t make any other ice cream.
