How to make vegetarian spring rolls
Vegetarian spring rolls are a staple of every Chinese restaurant. If you like them, you can learn to make them at home and eat them whenever you want and crave them. The absolute basics are rice paper, corn flour or rice. Other ingredients you will need include:
- 2 teaspoons oil, 2 teaspoons vinegar, 1 teaspoon corn flour, salt to taste, 7 pieces of rice paper, 1 tablespoon frying flour, 1 teaspoon ground black pepper,
- 1 carrot, 1 cup cabbage, 2 cloves garlic,
- 1 teaspoon sugar,
- 4 stalks chives, 4 grams ginger, 1 teaspoon soy sauce, 2 teaspoons chili sauce.
Preparation
Start by finely chopping the ginger, chives and garlic. Add the oil to a pan with the chopped ingredients and sauté for 60 seconds. Grate the cabbage and carrot and add to the pan. Continue stir-frying. Then add the sugar, pepper, salt, chili sauce, vinegar and soy sauce. Mix everything well. Next add the corn paste and mix everything again.
Then turn off the heat and set aside. Now prepare the rice paper so you can assemble the vegetarian spring rolls. Place a spoonful of filling in one corner. Pull and fold firmly over the tip of each sheet so that the filling is centered on the sheet. Fold the sides into an envelope. Continue until a roll is formed. Put a little frying flour on the corners. Fry on all sides until golden or bake them at 160°C. Drain on a paper towel and serve with sweet and sour sauce.
