If you often host celebrations, parties or just gatherings with friends, you may feel that the selection of refreshments is getting a bit repetitive, and you wonder what new idea to come up with to make everyone happy. Try bringing our crispy sticks to your next meeting with friends and you’ll see they’ll be gone in no time.

Yeast dough is not something to fear; with a little effort anyone can handle it

First you need to let the dough rise. If you’ve never made yeast dough before, there’s no need to be afraid — it will surely work out. The basics are the correct temperature of the ingredients used and a suitably warm environment for the yeast to work. For preparing the dough we will need:

  • 1 kg plain or semi-coarse flour,
  • 1 fresh yeast,
  • 1 teaspoon of salt,
  • 500 ml milk,
  • 100 ml oil.

A kitchen machine with a dough hook will make preparing the dough easier for us. If you don’t have one, it will work too, but you’ll have to work harder. The dough should be lifted with a wooden spoon for a longer time as if to aerate it. Mix all the ingredients (note, all ingredients should be at room temperature). If you have just taken the milk out of the fridge and plan to heat it, be careful that it is not too hot. If you pour hot liquid onto the yeast, it would kill the yeast bacteria and the dough would not rise. When the dough is ready, cover it with a clean cloth and place it somewhere warm for twenty minutes (by a window, on a radiator, etc.).

The dough is ready, we can get on with preparing the cheese sticks themselves

For the filling you will need:

  • 500 g fresh cheese,
  • 1 tablespoon of salt,
  • 125 g melted butter,
  • 200 g sour cream,
  • 2 eggs.

Mix all the ingredients to make the cheese filling. Roll out the risen dough into a rectangle and spread half of the prepared filling on it. Then fold the dough again, spread the other half of the filling, fold again, and roll with a rolling pin to a thickness of about 1 cm. Then cut into sticks, place on a baking tray lined with baking paper and let them rise a little longer. Then brush with beaten egg, optionally sprinkle with, for example, sesame seeds or poppy seeds, and bake for about half an hour at 180 °C.
