Do you like trying new desserts? And have you already heard about the mandarin roulade with vanilla cream? If not, don’t hesitate for a minute and definitely make it. It’s great not only for a Sunday coffee, but also for family celebrations or gatherings with friends. It will surely be enjoyed not only by children but also by adults. If the guests don’t find it silly, they will certainly lick even the tiniest bit of cream from the plate.
Batter
First of all, turn on the oven; you’ll need to preheat it to 180°. Then continue by preparing the batter. For that you will need exactly seven ingredients:
- 5 eggs
- 5 tablespoons granulated sugar
- a pinch of salt
- 5 tablespoons all-purpose flour
- 1 tablespoon cocoa
- 1 packet of baking powder
- 2 tablespoons mandarin juice
First separate the yolks from the whites. Add a pinch of salt to the bowl with the whites and beat them thoroughly until stiff peaks form. In another bowl mix the sugar with the yolks; you need to beat them well until frothy. Then add the mandarin juice. After that mix the flour with the cocoa and gradually add it to the yolks with the sugar. Finally start slowly folding in the egg white foam.
Pour the batter onto a baking tray lined with baking paper. Bake for about 15-20 minutes. After baking, roll the roulade, together with the baking paper, and let it cool
Cream
For the cream you will need:
- 400 ml milk
- 1 egg yolk
- 1 packet of vanilla pudding powder
- 5 tablespoons sugar
- 1 tablespoon all-purpose flour
- 150 g butter
First bring 300 ml of milk to a boil. Meanwhile, mix the yolk, vanilla pudding, sugar and flour in 100 ml of milk. Pour this mixture into the boiling milk, reduce the heat and let the cream thicken. Then stir the cream until completely cooled. Finally mix the cream with the softened butter.
Finishing
Now you just need to fill the roulade. Spread out the cooled cake and, all the way to the edges, spread the prepared cream over it. Place peeled mandarins on the cream — be careful, don’t peel them into segments, but leave them whole! After filling, roll up the roulade and let it rest. Preferably in the refrigerator, where it will firm up nicely and the flavors will meld.
