The weather is starting to cool down a bit, so we should look at ways to protect our bodies from illness.
A warming soup is a great option to warm up and enjoy a very healthy meal
It contains nothing harmful. But if you don’t really like the taste and smell of garlic, it probably won’t be right for you.
To prepare this tasty and healthy soup, prepare:
- 26 cloves of garlic, peeled, 2 ¼ cups chopped onion, 4 lemon slices,
- 2 tablespoons olive oil, 2 tablespoons butter,
- ½ teaspoon cayenne pepper, ½ cup grated ginger, 1 ½ tablespoons thyme,
- ½ cup coconut milk, 3 ½ cups vegetable broth.
Easy preparation of the tasty soup
First of all, preheat the oven to 180 degrees. Put all the garlic cloves into a bowl, add two tablespoons of olive oil and salt to taste. Cover with foil and bake until nicely browned, about 45 minutes. Then let it cool completely. Then you can slowly continue with the rest of the recipe.
- Melt the butter, add the onion, thyme, ginger and cayenne pepper.
- Sauté over low heat for about five to six minutes.
- Scoop out the roasted garlic and mix it into the vegetables sautéed in butter.
- Cook for another three minutes.
- Add the vegetable broth and cook for 20 minutes.
- Then blend until smooth.
- Add salt and pepper to taste.
- When serving, add a lemon slice to each plate.
Other soups for the sick
Garlic soup, of course, isn’t the only one you can make. If you don’t like it, you can also try spinach soup with mint and fresh cheese, beef broth with vegetables and herb dumplings, goulash soup with oyster mushrooms or carrot soup with apples and onions. Or you can simply rely on the classic onion soup as you know and love it. Remember that soup, rest and good hydration are the basis for recovering from a cold.
