Do you want to prepare a tasty dessert for your family for the weekend or to show off before an expected visit? For entertaining, prepare this wonderful dessert that will dazzle everyone at first sight and with the very first bite. Its preparation is very simple, so it won’t take you much time.
The main ingredient that makes the recipe interesting and refreshing is apricots. The tender dough combined with quark and apricots will captivate you at the very first bite, and so this recipe will become one of the most beloved.
To prepare the cake you will need:
- 200 grams of flour
- half a packet of baking powder
- 75 grams of butter
- 1 packet of vanilla sugar
- 4 eggs
- 750 grams of quark (40%)
- 150 grams of sugar
- 1 packet of vanilla pudding mix
- a teaspoon of lemon zest
- 50 milliliters of milk
- 700 grams of apricots
First of all, prepare the apricots. Wash and clean them thoroughly, cut them in half and remove the pits. Cut half of the apricots into small pieces, leaving the other halves whole. Put the apricots aside and start preparing the dough.
Make a nice dough
In one bowl mix the baking powder with the flour, also add the cold butter and vanilla sugar. From these ingredients, work the dough. After working it, wrap the dough in cling film and let it rest in the refrigerator for at least half an hour.
In the meantime prepare the mixture for the top part of the dessert. In a bowl mix the quark, sugar and vanilla sugar. Mix everything thoroughly and add the eggs, milk, lemon zest and pudding mix. Finally add the apricots cut into pieces.
It’s time to assemble in the pan
Spread the firm dough into the baking pan, don’t forget the raised edge, which will firmly support the whole cake. On the firm part of the dough spread the quark and apricot mixture. Finally place the apricot halves on top and put it into the oven to bake. Bake at about 175 °C for 70 minutes, then remove from the oven and let it cool for another quarter of an hour.
