Beetroot, often an overlooked vegetable, truly has wide health benefits. Nicknamed “as healthy as a beet,” it is rich in vitamins C, K and the entire B-vitamin group. It also contains minerals such as sodium, potassium, calcium, magnesium, and iron. This mix of valuable nutrients brings positive effects to our cardiovascular system, skin and digestion, and increases our overall resilience.
Beet kvass
One of the most effective ways to take advantage of beetroot’s health benefits is its fermented version – the so-called beet kvass. This drink is rich in enzymes and probiotic bacteria that aid digestion and support the body’s detoxification. A study conducted at Newcastle University of London even found that supplementation with beet kvass lowers blood pressure, which is beneficial for people at risk of heart disease.
Health benefits of consuming beetroot
Beetroot has many beneficial effects on the body:

Recipe for beet kvass
Needed ingredients:
- 700 g of beetroot
- 2 tablespoons of flour or a piece of rye bread
- 200 g of sugar
- 100 g of raisins
- a 3-liter glass jug or a preserving jar
- a lid with holes or gauze for closing
Preparation method
- Clean, peel and chop the beetroot into cubes. Put it into a container.
- Add the raisins, flour (or bread) and sugar.
- Pour in boiled and cooled water and mix well.
- Close the container with gauze or a lid with holes and leave the mixture in a warm place for 6–7 days. Stir the contents every day and remove any foam if necessary.
- After a week, strain the mixture through gauze and store the drink in the refrigerator.
Consumption of beet kvass
It is recommended to consume 3 to 4 tablespoons three times a day before meals. You can repeat this process every three months as a cure for cleansing and regenerating the body.
Warning: Beet kvass is not suitable for people with low blood pressure, chronic kidney problems or acute digestive issues. If you have any health concerns, consult with your doctor before regular use.
