Potato salad is one of the greatest treasures of Czech cuisine. It has its place not only on Christmas Eve dinner, but also at family celebrations and Sunday lunches. Although almost every household prepares it, few know the little tricks that make it the truly perfect Christmas salad – creamy, delicious and beautifully balanced.

Ingredients
(4–6 servings)
- 1 kg of type A potatoes (salad potatoes)
- 3 eggs
- 2 carrots
- 150 g of quality ham
- 1 bunch of spring onions
- 100 g of canned peas
- 3–4 pickled cucumbers
- 2 tablespoons of chopped fresh dill
- 200–250 g of mayonnaise
- salt and pepper to taste
Step-by-step instructions
1. Cook the potatoes and vegetables
Cook the potatoes in their skins so they don’t overcook. Cook the carrots together with them. Let them cool completely so the mayonnaise doesn’t become diluted. Peel and cut into small cubes.
2. Hard-boiled eggs
Boil the eggs for 9–10 minutes, then cool them, peel and cut into small pieces.
3. Prepare the other ingredients
Dice the ham, chop the pickles finely, and slice the spring onions finely. Add them to the potatoes along with the peas and chopped dill.
4. Combine the flavors
Place all the ingredients in a bowl, add the mayonnaise, salt and pepper. Mix gently so the potatoes don’t fall apart.
5. Let it rest
Place the salad in the fridge for at least 2–3 hours, preferably overnight. The flavors will meld beautifully and the salad will be creamier.

- Good-quality mayonnaise will significantly impact the final taste
- Remove excess liquid from the pickles
- You can also season with a little pickle brine
