This cake is notable for its versatility. You can prepare it with various types of fillings. In Linda Anderssonová’s recipe you will see it with fresh berries and fluffy whipped cream. However, you can prepare it to your own taste, so surprise your family at afternoon coffee or tea!

You can decorate the cake according to your ideas

To prepare the cake you will need:

  • 5 egg yolks
  • 100 g butter at room temperature
  • 1,5 dl powdered sugar
  • 2 teaspoons vanilla sugar
  • 2 teaspoons baking powder
  • 2 dl wheat flour
  • ¾ dl milk

These ingredients are for preparing the basic batter.

Then you will need:

  • 5 egg whites
  • 2,5 dl powdered sugar for making the meringues.

As decoration you can sprinkle almond shavings on the cake. Use fruit you like as a filling and combine it with 3 dl whipping cream.

For the sponge base you just mix the ingredients and pop it in the oven

First preheat the oven to 150 degrees. Separate the eggs into yolks and whites; keep the whites for the meringues and use only the yolks in the batter. Cream the butter and powdered sugar, add the yolks and continue to beat. Add the remaining ingredients and whisk into a smooth batter. Spread it on a baking sheet that you have lined with baking paper.

Making the meringues is simple. Beat the egg whites until they are white and fluffy. Gradually add the powdered sugar and beat to a stiff meringue. Spread the mixture like a blanket over the batter. Then sprinkle with almond flakes and bake for about 30 minutes. Afterwards remove and let the cake cool completely.

Divide the cake into two parts. Put half on a serving plate or tray. Whip the cream and spread it on the bottom layer, sprinkle fresh berries on it, then place the second layer of cake on top of the fruit. Instead of fruit you can use, for example, vanilla or chocolate cream in the middle. This cake is great precisely because you can make it differently every time. For the filling you can use blueberries, raspberries, strawberries or plums.
