Do you fancy something sweet? Or are you thinking about something savory to nibble on with an evening glass of wine? You can enjoy both—even from a single dough! No sugar is added to these rolls, so it’s up to you how you make them.
Ingredients for 12 rolls:
- 240 g plain flour
- 100 g sour cream
- 125 g butter or baking fat
Method:
Put the flour into a bowl, pour in the cream and add the chilled grated butter. Start kneading until small lumps begin to form. At that moment shape a ball from the dough, wrap it in cling film and let it rest in the fridge for 30 minutes.
After removing it from the fridge, divide the dough into 4 parts and roll each of them into a triangle about 1 mm thick. Cut each of these triangles into three pieces, giving you 12 small triangles.
To get a nicely rolled crescent, you must grab the dough from the wider side and roll towards the tip. It’s a good idea to press lightly on the tip so the dough doesn’t start to unroll in the oven.
Place the crescents on a tray lined with baking paper and let them rest in the cold for 15 minutes – the dough will become beautifully crisp. Then simply put the tray into an oven preheated to 190 degrees for about 20 minutes or until golden. After cooling, coat the crescents in icing sugar.
Stumped about fillings? Let your imagination run wild
It doesn’t matter what you fill the crescents with—it’s entirely down to your taste. You can try plum jam, quark with poppy seeds, chocolate spread, peanut butter or jam. As for savory fillings – you can go just as wild. Always combine ingredients that complement each other in flavor. Will you prefer finely chopped English bacon with cabbage, a mix for devilish toasts, or will you most enjoy tuna with olives and onions? It’s up to you what you fill this treat with.
