Two simple recipes for excellent desserts.

Pancakes with vanilla cream

To prepare the pancake batter you will need:

  • 500ml milk
  • 200g plain flour
  • 2 eggs
  • 2 tablespoons vegetable oil
  • 1 tablespoon sugar
  • a pinch of salt
  • 1 teaspoon baking powder

Thoroughly mix all the ingredients and let the batter rest for half an hour. Ladle the batter onto a heated pan and fry the pancakes on both sides. If you have a good pan, you won’t need any additional oil for frying. Stack the finished pancakes to the side. Prepare the vanilla cream; for it you will need:

  • 500ml milk
  • 3 tablespoons flour
  • 2 eggs
  • 70g butter
  • vanilla extract

Cook the milk with the flour, eggs and a few drops of vanilla extract over low heat until the mixture thickens. Remove the pot from the heat and stir in the butter cut into cubes. To get a perfectly smooth cream, use a whisk. Fill the pancakes with the cream and roll them into rolls. If you don’t feel like making the cream, you can of course fill the pancakes with anything you have at home, such as Nutella or jam.

Rolls with poppy seed or walnut filling

This dough is very versatile. Rolls or little crescents, sweet or savory variants – try filling them with spinach, for example. There are no limits to your imagination! For the dough you will need:

  • 1 cup cream
  • 250g margarine
  • half a teaspoon baking soda
  • 2 – 4 cups flour

Start by pouring 2 cups of flour into a bowl. Add the butter and mix it with the flour; crumbs will form gradually. Add the baking soda, mix again and pour in the cream. Knead the dough by hand and add flour little by little. The consistency of the dough should finally be firm, about like a cooked bread dumpling. You may end up adding another 2 cups of flour, depending on its quality. Cover the stiff dough with plastic wrap and put it in the fridge for at least an hour.

Prepare the fillings. For the poppy seed filling buy ground poppy seeds, or grind them in a coffee grinder. Cook them in milk and add sugar to taste. Grind the nuts and mix with sugar. To make the walnut filling moist, you can grate an apple into it. Whatever filling you make, keep in mind that it should be quite sweet. There is no sugar in the dough.

Roll the dough with a rolling pin to a thickness of about 1mm. Cut out triangles, fill them and roll them into little rolls. Bake in a preheated oven at 180°C for 10 – 15 minutes. Don’t expect the rolls to brown; they will stay light! There is no sugar in them to brown during baking.
