Who wouldn’t enjoy something tasty with a cup of coffee, especially in these gloomy days that practically invite you to sit by a lit fireplace with a hot drink in your hand to warm you up. If you are among poppy seed lovers, definitely try this recipe for an amazing poppy seed strudel that will fill your whole house with fragrance.
You can happily buy the dough ready-made – whether leavened or puff pastry. If you want to make it yourself, we have a quick guide for you. Mix half a kilo of plain flour, a grated block of baking fat or butter, 1 small tub of plain yogurt, a pinch of salt and an egg. On a floured work surface knead the dough until it no longer sticks to your hands. Put it to rest in the fridge for 15 minutes and in the meantime prepare the filling.
Ingredients:
- 1 egg
- 200 g sugar
- 200 g poppy seeds
- 0.5 l water (you can also use milk to soften the taste)
- a pinch of salt
- 1 tablespoon rum
Grind the poppy seeds finely in a meat grinder (you can also buy them ground) and let them simmer in milk or water with the sugar, salt and rum. After thirty minutes of cooking let it cool. If the filling seems too thin, you can thicken it with grated gingerbread or sponge cake.
Divide the dough into 4 parts and roll each into a rectangle. Spread the poppy filling on them and carefully roll into a strudel. Remember to press the ends so the filling doesn’t leak out during baking. Place the wrapped strudels on a baking sheet lined with baking paper and brush with yolk – the dough will be beautifully golden and shiny after baking. On top you can sprinkle the strudels with the remaining poppy seeds or almonds, if you have them. Bake in an oven preheated to 30 degrees for 30 minutes.
You can enhance the filling with grated apple, raisins, cinnamon, vanilla sugar or ground nuts. In short, there are no limits to imagination, so don’t hesitate to liven up your strudel with new and original flavors.
