Prepare an excellent roulade that can be a great dessert even for more festive occasions. Thanks to the rich filling, it will truly be a juicy and maximally tasty dessert that you will love also because of its relatively simple preparation.

What you will need for the batter:

  • 5 eggs
  • 80 grams of sugar
  • 60 grams of cornstarch
  • 70 grams of vegetable oil
  • zest of 1 lemon
  • 1 vanilla extract
  • 1 pinch of salt

Ingredients for the excellent roulade filling:

  • 6-7 tangerines
  • 1 cup of tangerine juice
  • 30 ml lemon juice
  • 80 grams of sugar
  • Half of the lemon zest
  • 20 grams cornstarch
  • 400 ml cream with 33% fat

Procedure for preparing the roulade

First of all, prepare the cream from the listed ingredients. First, mix the sugar and starch in a larger bowl and stir. Gradually add the tangerine juice, but continue stirring constantly so that no lumps form. To that add the lemon juice, lemon zest and again mix thoroughly. Then put this prepared mixture on low heat to cook and keep stirring. Once it thickens, cover the pot with plastic wrap.

Before cooling the mixture for the filling, prepare the batter. Begin this preparation by whipping the egg whites. Add a pinch of salt to them and about half of the sugar from the prepared amount. Whip the egg whites until they are stiff. In a second bowl mix the yolks with the sugar and vanilla extract. To the yolk mixture add the lemon zest, mix and add the cornstarch while stirring constantly. Also add the whipped egg whites and the oil to the batter and mix thoroughly. Pour the batter into a baking pan and put it into the oven for about 15 to 20 minutes at 180 degrees. The batter will be ready when it has a golden tint.

Complete the cream by whipping the cream, to which you then add the previously prepared cooked mixture. Mix thoroughly. Spread the cream inside and place the peeled tangerines. Roll the roulade and you are done.
