This homemade cake not only looks great but also tastes wonderful. It smells wonderfully of mandarins and will enchant both your family and guests at an afternoon coffee. Its preparation is very simple and even children will enjoy decorating it. Bake a mandarin cake together and you’ll see it become your favorite recipe. What will you need?
- 4 sweet mandarins
- 250 g flour
- 150 g sugar
- 2 eggs
- 150 g sour cream
- 50 g butter
- 1 tablespoon orange zest
- 2 teaspoons baking powder
How to do it?
First peel the mandarins and prepare the remaining ingredients. Cut the butter into smaller pieces. Preheat the oven to 180 °C. Beat the sugar and eggs with a mixer until a white, fluffy mixture forms. It should be firm enough for the cake to be properly moist. Then add the sour cream and beat a little longer.
Add the orange zest to the beaten mixture to give the cake a lovely aroma. In a bowl, mix the flour with the baking powder and slowly fold in the beaten ingredients. Stir gently and with care so the batter stays properly airy and delicate. The ingredients should combine perfectly to form a smooth batter.
Bake for about half an hour
Grease a cake pan with a little melted butter or oil. Line the bottom with baking paper. Pour the batter into the prepared pan and spread it so it’s even across the surface. Then divide the peeled mandarins into individual segments and decorate the batter in the cake pan as you like. You can arrange them in circles or simply scatter them over the cake. The important thing is that they are distributed across the whole surface of the cake.
Then sprinkle the mandarins with butter cut into small pieces. In the oven it will melt and the cake will be moist throughout. Bake the prepared dessert in the preheated oven for about 30 minutes, until the surface is slightly browned. Serve it garnished with whipped cream as a dessert with coffee or as a sweet, fruity breakfast.
