The curd pudding is delicious, and besides that also a healthy dessert that can be easily prepared at home. You can thus surprise your loved ones with an excellent dish. You can judge for yourself the healthiness and suitability of the ingredients for the human body. For the curd pudding you will need the following ingredients:
- 5 eggs
- softened butter or vegetable fat
- 0.5 kg curd
- 100 g sour cream
- 1 tablespoon granulated sugar
- potato starch
- 2 tablespoons vanilla sugar
Cooking the curd pudding
The curd for such a delicate pudding is better chosen without acidity, mild, soft and fatty. The taste of the curd pudding depends precisely on the quality of the curd, so you should not skimp on it. Into a deep bowl or dish place the curd, the egg yolks from five eggs, the sour cream, the potato starch and the vanilla sugar. Put the egg whites in the refrigerator for the time being; you need them to be cold.
Using a mixer, transform the curd with the other ingredients into a uniform curd paste without lumps. If you cannot use a mixer, press the curd through a fine sieve or use a meat grinder and mix everything thoroughly. Take the egg whites out of the refrigerator and whisk them into a thick foam that holds its shape well. Continue whisking the whites and add the sugar to them in small portions. When all the sugar is in the mixer, beat the whites and sugar for another 5 minutes.
Then set the beaten egg whites aside and work with a spoon or spatula. Take several tablespoons of the sweet egg-white foam, add them to the curd mass and fold in with gentle and slow movements. With quick and strong movements disturb the form of the whites in the curd; oxygen will get into them and as a result the dessert will not hold its shape. The curd mass will become very airy.
Carefully place the batter for the curd pudding into a pan greased with butter or other fat in which you will cook it. Regardless of how you cook this pudding, you must not open the oven or the lid of the container during cooking, otherwise the pudding will sink.
Other preparation methods
For steaming the pudding, use a rice steaming mold greased with fat or lined with baking paper so that the pudding can be removed easily. Place the soufflé of curd batter into the mold and cover the top with foil so that condensation from the steam collects on it, not on the pudding. Cook the pudding for about 40–45 minutes and let it cool directly in the steamer. You do not have to be afraid of a browned bottom. After removing it you can garnish with banana cream and chocolate crumbs.
The curd pudding can also be baked. The baking time for the curd pudding according to this recipe is 45–50 minutes at 180 degrees in a preheated oven. Do not remove the finished pudding immediately from the oven; let it stand inside with the oven door slightly ajar until the oven has completely cooled. Then decorate with banana sour cream and chocolate shavings.
The last option is cooking in a multicooker. Place the pudding intended to be baked in a multicooker into the baking mode. The curd pudding bakes for 65 minutes; you can set the “doba vaření” button. Do not open or check during the cooking of the pudding; you should not do this even after the cooking time has elapsed. Turn off the multicooker and let it stand for 1 hour in the closed cooker. Only then can the lid be opened. Only now can the pudding be removed. Let it cool and decorate with sour cream, or with banana cream and grated chocolate.
