There are a large number of cakes, pies, and even buns made from grated dough. But they all have one thing in common: easy preparation. We have prepared for you a delicious cake with fresh cheese and rum raisins. The soft cheese together with the raisins, even non-rum ones, will be the perfect combination for grated dough. This is a recipe based on linzer shortcrust dough.

Ingredients needed for the cake

A perfectly delicious cake that will be just right for an afternoon coffee. Prepare a few ingredients and you can start:

  • Eggs 2 pieces size M
  • Butter 100 grams
  • Salt ⅓ teaspoon
  • Sugar 150 grams
  • Plain flour 350 grams
  • Baking powder 1 teaspoon
  • Fresh cheese – mascarpone or quark 500 grams
  • Eggs for filling 2 pieces
  • Raisins 100 grams (optional)
  • Sugar 100 grams
  • Vanilla to taste

Preparation

Prepare all the ingredients at least half an hour before baking the cake. The butter must be softened so it is easy to work with. Now take a larger, deeper bowl and whisk the eggs in it, to which you add the sugar and a pinch of salt. The eggs must change color to light yellow when whisked and also slightly thicken. Once whisked, add the softened butter and whisk the ingredients again. A smooth mixture should form. Prepare the flour, which you should sift through a sieve so the cake will be fluffier. Now gradually add the flour to the butter and eggs. Stir first with a wooden spoon and then with your hands. The dough must be supple and soft, and should slightly stick to your hands. Divide the dough into two halves and let it rest for 20 minutes.

Final stage

Now it’s time to prepare the cheese filling. In a deep bowl mix half a kilo of cheese, two eggs, sugar and vanilla. If you use a mixer, everything will be quicker. If you want to use raisins, soak them for 10 minutes in boiling water so they increase in volume. Then remove them, let them drain and soak them in rum. Again let them drain and add the raisins to the cheese mixture. Mix again. Take out the dough and grate one half on a coarse grater. Grease the cake pan, dust it (with flour) and place the grated dough into the pan. Pour the cheese filling onto the dough and cover with the second half of the grated dough. Preheat the oven to 180 °C and bake for approximately 40 minutes.
