Chocolate cake with cherries: An irresistible combination that will be gone in no time

If you love chocolate, this cake will surely suit your taste perfectly, and when you add cherries, your taste buds will experience an explosion of flavor. The cake is simple to prepare, very tasty, moist, tender and has a rich chocolate flavor that is highlighted by tart cherries – delicious!

You will need:

  • Eggs 2 pieces
  • Sugar 200 grams
  • Milk 230 milliliters
  • Vegetable oil 50 milliliters
  • Butter 50 grams
  • Wheat flour 200 grams
  • Cocoa 45 grams
  • Baking soda 8 grams
  • Salt ½ teaspoon and vinegar one tablespoon

For the cream you will need:

  • Mascarpone 300 grams
  • Condensed milk 150 grams
  • Cocoa 25 grams
  • Chocolate 100 grams
  • Cherries 130 grams

Glaze

  • Chocolate 50% 100 grams
  • Milk 50 milliliters
  • Butter 50 grams
  • Peanuts 50 grams

Preparation

Preheat the oven now to 165 °C; preparing the cake base will be quick. In a deep bowl mix the flour, cocoa, sugar, salt and baking soda – mix everything together. Now it’s time for the wet ingredients. In a second bowl mix room-temperature milk, vegetable oil, melted butter and stir. Whisk the eggs separately and add them to the wet ingredients. Mix the wet ingredients with the dry ones and add the vinegar. Bake in a cake pan with a diameter of 19 centimeters. Line the pan with baking paper or grease it well and dust with coarse flour. Pour the batter and level it in the pan. Put the prepared cake into the oven and bake 60-70 minutes. Do not open the oven door for at least 40 minutes. If the cake is baked, you’ll know by inserting a skewer into the cake. The batter must not stick to the skewer. After baking, remove the cake from the oven and let it cool for at least twenty minutes. Transfer the cake base to a rack and let it cool more thoroughly.

Preparing the cream

Cut off the top of the cake base and cut out the center of the bottom part. Cut at least one and a half centimeters from the edge. You will create a kind of shell for the cream. Now you will need to melt the chocolate in the microwave. Set the chocolate aside and whip the cheese and add the cocoa and condensed milk. Mix until the mixture is smooth. Add the melted chocolate and mix again. Then take 200 grams of the removed central part of the cake base, crumble it into crumbs and mix with the cream. Add the cherries to the cream, properly drained or still frozen. Stir and pour the cream into the cake base. Cover the cream with the top layer of the cut-off cake base and prepare the glaze.

Glaze

For speed and greater convenience, break the chocolate into pieces. Add the milk and butter to it. You can put the chocolate in the microwave, but in this case we recommend melting the mixture in a bain-marie. While the chocolate is melting, chop the peanuts and add them to the chocolate. Once the chocolate is melted, pour it over the cake. Let the chocolate on the cake cool slightly and place the cake in the refrigerator for at least six hours. This allows the cake base to soak up the cream and become deliciously moist and not fall apart. After removing it from the fridge you can coat the sides of the cake with chocolate.
