Add ingredients gradually
The key to success is in perfectly mixing all the ingredients, and that can only be achieved by adding them gradually in the correct order. You can make the work easier with a hand whisk. Let’s get to it.
Ingredients for the base:
- 8 egg whites
- 8 tablespoons granulated sugar
- 8 tablespoons all-purpose flour
- 1 packet of baking powder
Cream:
- 8 egg yolks
- 1 block of solid fat for baking;
- 15 dkg powdered sugar
- 5 tablespoons granulated sugar
- 5 tablespoons all-purpose flour
- 2 packets of vanilla sugar
- 4 dl milk
How to proceed? Start with the dough and during the baking time you can get to the cream. First beat the egg whites into stiff peaks. Separate half of the meringue; you will need it for decoration. Then add the sugar and beat thoroughly again. Next add the baking powder and flour, at which point swap the mixer for a spoon or whisk and gently fold so the meringue does not lose volume. Bake at 180 °C on a baking sheet about 30 x 20 cm in size. During baking check the state of the dough with a skewer and follow the color of the dough rather than the time. When it starts to turn golden, it is time to turn off the oven.
Pour the milk into a saucepan and heat slowly. Add the sugar, vanilla sugar and thicken with flour. You will get a thin mixture which you let cool. Whisk the fat with the egg yolks and powdered sugar and mix with the cooled milk. Spread a layer of this cream on the base, add a layer of the egg white meringue on top and finally sprinkle with cocoa. Enjoy your meal!
