Russian cabbage soup with chicken thighs, potatoes and fresh cabbage. It is an authentic Russian soup that was originally made from beef, but there isn’t always enough time to prepare beef broth. Chicken meat comes in handy because it cooks faster.

The cabbage soup will be mellow thanks to the chicken, but no less tasty than with beef

Chicken broth is known for its healing properties, so you definitely can’t go wrong with it. The soup is aromatic and delicious. In addition, it helps with colds. For this soup prepare:

  • Chicken thighs
  • 2 potatoes
  • Fresh cabbage
  • 300 g carrots
  • 1 onion
  • 1 tomato
  • 1 pea pod
  • Pepper
  • Sour cream

This quantity makes six servings of chicken soup. First, cover the chicken thighs with water and bring to a boil. Reduce the heat, season with salt and cook until tender, which will take about half an hour. Then remove the meat from the broth, separate it from the skin and bones. Peel and dice the potatoes and add them to the broth. Cook for about 15 minutes, until soft.

You can sprinkle the finished soup with chopped herbs

Chop the cabbage, as well as the tomato and the peas, and cook together for about 10–15 minutes. Dice the onion, coarsely grate the carrot. Slice the pepper into thin strips. Heat oil in a large pan, add the chopped vegetables and sauté until soft. Add the sautéed vegetables and pieces of chicken to the broth. Salt, pepper and cook for 10 minutes.

Add the bay leaf and pepper only five minutes before the end of cooking. Pour the cabbage soup into bowls, place a piece of chicken in each bowl and serve with bread and sour cream. If possible, add chopped herbs and you can also serve it with garlic. You can also try a version with beef — if you prepare a strong broth, you definitely won’t go wrong and you may even enjoy it more. Also serve it as a main course, because the soup is very hearty. You can freeze the broth itself and use it in another soup.
