Each of us has made pancakes at some point, but usually the first one doesn’t turn out. Why is that? Everyone has their own recipe that they have adapted to their taste, yet it can still happen that the pancakes don’t turn out, are rubbery, or tear. Thanks to a simple trick you can easily prevent both.
For the right batter you need the right ratio of ingredients
For pancakes that will not only taste good but also look great, you will need:
- 60 dkg plain flour
- 4 eggs
- A pinch of baking powder
- 2 tablespoons of sugar
- 3.5 dl of water
- 4 dl of carbonated orange drink, non-alcoholic
First mix together the sugar, eggs, and water to create a perfectly smooth batter. Then gradually add the flour and don’t forget the baking powder. Stir slowly and add the carbonated orange drink little by little. Many people make pancakes very thin so they can be easily rolled. They are then thin and fragile, but if you add the orange drink, they will be nicely light and it certainly won’t happen that they become rubbery and that children won’t like them.
You can fry pancakes in a sweet or savory way
When frying pancakes it very much depends on whether you have a quality pan. With a good pan you won’t need oil or any other fat and you can easily fry the pancakes dry. That makes the pancakes healthier, and if you also add savory ingredients, you can create a full meal that you can enjoy without guilt.
Always heat the pan well, because that can also have a big effect on whether you succeed with the first pancake. If it doesn’t want to separate from the pan, use more fat. However, the problem may be in the batter itself or in a poorly heated pan. Every batter must contain a pinch of salt. If you want very thin pancakes, use enough milk. Thanks to the flour the batter, on the other hand, holds together; always use plain flour, because you won’t get them thin with semi-coarse flour.
