Strawberries are among the most popular types of fruit not only with children but also with adults. In the summer season, when there are plenty of strawberries, choosing strawberry desserts is the best option. Try this great dessert called Strawberry Clouds. A cake or pie named Strawberry Clouds will impress you with its moistness and lightness. The fresh taste of strawberries is complemented by a crumbly pastry crust and a delicate cream. If you don’t have strawberries on hand, you can use other fresh fruit instead; for example, berries are excellent in this combination.
Peaches are also definitely among the favorite types of fruit; they will turn the dessert into a delicious and delicate sweet that will please you, the whole family, and guests. If you want to prepare an interesting dessert with an original combination of flavors, you can try mixing berries with pieces of orange — the citrus flavor will elevate your dessert to another level. Additionally, lemon zest will correspond beautifully.
For the dough you will need:
- 300 g flour
- 250 g sugar
- 2 egg yolks
- vanilla, grated lemon zest
- 250 g butter
For the top of the cake prepare:
- 4 egg whites
- 250 g sugar
- 300 g strawberries or other fruit
The dough will be ready in a few minutes
In a bowl, mix the butter with the sugar, lemon zest and vanilla. Let the mixture rest at room temperature for at least 15 minutes, then add the egg yolks and flour. Mix everything thoroughly until a firm dough forms.
Prepare a sheet of baking paper covering the entire baking tray. A rectangle roughly 20 x 25 cm will be more than enough. Transfer the dough onto the baking paper and spread it evenly.
First, bake the dough
Place the firm dough into a preheated oven at 180 °C. Baking will take about twenty minutes, until the dough is completely golden. During baking you can start preparing the cream. To make the cream, carefully whisk the egg whites, gradually adding 250 grams of sugar.
Spread the whipped egg white cream evenly over the baked dough, then spread the whipped meringue on top. Finally add the strawberries, which you can arrange nicely. There should be sufficient space between the individual pieces so the appearance isn’t spoiled. Put the entire dessert back into the hot oven for a while, for about 20 minutes.
In about an hour your dessert will be ready. You can serve it with grated chocolate and it goes great with afternoon tea.
