It only takes a handful of raspberries and I'll make 1.5 liters of homemade lemonade from them that tastes absolutely delicious when chilled!

The fabulous raspberry syrup tastes wonderful, it is also a boost for health. It contains a whole range of vitamins, minerals and other beneficial substances that help strengthen the immune system, firm the blood vessels and reduce stress. Raspberries have antioxidant and anti-carcinogenic effects. Homemade raspberry juice also does not contain added substances, excess carbohydrates or E-numbers. When using soda water you can also make a great lemonade that can be enhanced with ice and a sprig of mint.

Ingredients

What will you need to prepare homemade raspberry syrup besides home-grown or wild raspberries? For 1.5 liters of syrup you will need:

  • 1 cup of raspberries – about 250 ml,
  • 80 raspberry leaves,
  • 850 ml of water,
  • 1 teaspoon of citric acid,
  • 1 kg of sugar.

Preparation

Prepare a cup of sorted and clean raspberries. Put them into a sufficiently large pot together with the water and young raspberry leaves, which are rich in minerals. Bring to a boil and then simmer for about 10 minutes. Then strain through a cloth and squeeze out the remainder well.

Now add the sugar and citric acid to this strained juice from the fruit and raspberry leaves and cook again for about 10 minutes. Prepare the bottles into which you will pour the juice. You can use glass bottles that previously contained spirits with 40% or more alcohol; those do not even need to be washed. Wash other bottles thoroughly and sterilize them with hot water from an electric kettle. Cover the bottle tops with gauze and pour, then seal them while still hot. No further sterilization is necessary because the sugar and citric acid are enough to keep the syrup from spoiling for many months.

If the syrup starts to gel, you can tap it; this does not affect the quality. Fragrant raspberry syrup is suitable for children’s daily consumption; you only need a little (approx. 1:6) and dilute it with plain water. You can make an excellent lemonade from the syrup and soda water; you can add lemon, a sprig of mint or lemon thyme.
