How to prepare an excellent dessert for family and friends when you don’t know how to cook or bake? Here is a recipe thanks to which anyone can manage to make a blueberry cake without knowledge of pastry-making. Just prepare a cup or a container with a volume of 350 ml, which will serve to measure the ingredients. Believe that in a few minutes you’ll be done and what a treat! Now just try how such a cake would taste instead of with blueberries also with red or blackcurrants, jostaberries or gooseberries!
Ingredients
What will you need to prepare the mug blueberry cake besides the mentioned 350 milliliter measuring container? Prepare:
- flour – 2 cups
- lukewarm milk – 1 cup
- powdered sugar – 1 cup
- baking powder – 1 packet
- oil – ½ cup
- eggs – 4
- fresh blueberries – 1 l
- salt – a pinch
Preparation
In a deep bowl, beat the yolks with the sugar (vanilla lovers can add vanilla sugar) and gradually add the oil and fold in the sifted flour. If the mixture becomes too thick, add the milk; finally sprinkle in the baking powder and mix well to avoid lumps.
In a glass or metal bowl beat the egg whites into stiff peaks, seasoning with a pinch of salt. Now fold the whites into the prepared batter using a spoon. Mix thoroughly so that all the ingredients combine.
Now prepare a deep baking tray, grease it with butter or margarine, dust the pan with flour or semolina and pour the batter evenly so it reaches all corners. Spread fresh blueberries over the surface; you can gently press them into the batter. Place the tray into a preheated oven at 180 °C for about 20-30 minutes. After the first 20 minutes, check regularly to ensure the cake doesn’t burn. You can serve with a scoop of ice cream and a spoonful of whipped cream.
Use other garden and seasonal fruits
The endless advantage of this mug cake is its easy preparation and great versatility; you can use any fresh or canned fruit. Cherries, sour cherries, apricots or peaches are excellent. For small berries, add a little extra sugar because they tend to be more tart.
