Prepare a delicious summer mojito that will keep in a jar until winter. You will need only three ingredients – strawberries, mint and a lemon. The original and excellent taste will refresh you in summer and remind you of hot summer evenings in winter. If you make fruit compote every year, try this recipe in addition to the classics, you won’t regret it. What will you need?
- 500 g strawberries
- 2 slices of lemon
- 1 sprig of fresh mint
- 300 g sugar
Prepare a three-liter jar
Ingredients are calculated for a three-liter container. First wash the strawberries, remove the stems and dry them. Put them into the prepared three-liter container together with a few slices of lemon and a sprig of mint. Pour boiling water into the container and let it stand for about half an hour to forty minutes. Then pour all the liquid from the container into a large pot.
Add the sugar to the liquid in the pot and cook until it is completely dissolved. This should take about two to three minutes from the boiling point. You can remove the mint from the mixture at this stage, or leave it in. Pour the finished sugar syrup with the strawberries back into the jar and seal it like a classic compote. Let the jar stand upside down until it cools, and you’re done.
Jars must be sterilized
Canning preserves and sterilizes the selected fruit. The key is to use only completely sterile and clean jars, otherwise your compote could start to spoil. If you don’t have special equipment available, at least wash the jars and lids with hot water to remove any possible microorganisms. The fruit in the jar should be arranged so that there are no large gaps, but also so that it doesn’t press against itself.
Pour the liquid into the jar through a special funnel to prevent part of the syrup from sticking to the threads. Once the compotes have cooled to room temperature, you can take them to the cellar or the pantry where you want to store them. A dark and cool place suits them. It’s a good idea to always label each jar with the type of fruit and the canning date.
