Many women who are at home and take care of the family have plenty of recipes on hand for processing seasonal vegetables. The star is mainly zucchini, from which you can make lots of dishes, but of course you can also can it together with other types. This way you get a perfectly balanced flavor, and you can use the mixture mainly in the winter months when there is little produce and it costs more money.

Mix zucchini with other vegetables and season with spices

If you decide on the following recipe, be sure that in winter you will be delighted when you find the right mixture in the cellar. For these great preserves you will need several kilograms of vegetables, but you will not regret it because the taste of this mixture is very delicious and you will easily give in to it. In winter, a jar of this vegetable mixture that nobody can resist will stand on your table. For the preparation you will need:

  • 3 kg zucchini
  • 2 kg peppers
  • A jar of sugar
  • 2 kg tomatoes
  • 100 ml vinegar
  • A cup of sunflower oil
  • 1 bunch of parsley
  • 0.5 kg onions
  • 5 cloves of garlic

Peel the peppers, slice them, and slice the tomatoes the same way. Peel the onion as well and cut it into quarters. Put the vegetables, garlic and parsley into a blender, blend and put the mixture into a pot or pan. Thoroughly wash the zucchini, cut it into small cubes and add to the vegetable mixture. Finally add salt, sugar and vegetable oil and cook for about half an hour.

The mixture goes well with boiled potatoes or pasta

At the end of cooking add the vinegar to the mixture, stir and put the vegetables into prepared, sterilized containers. Use containers or jars that can then be closed well. Turn the jars upside down, wrap them in a blanket or towel and let them cool at room temperature.

You won’t even need meat, because this vegetable mixture replaces it perfectly. It goes well with mashed potatoes, pasta or boiled potatoes. You can also give the mixture as a gift; just decorate a jar with a ribbon and write a greeting or note.
