  1. Peel 3 beets and cook them in water with a little salt.
  2. After cooking, place them in a bowl and let them cool.
  3. Cut the cooled beets into cubes, slices, or grate them.
  4. Peel two onions and chop them finely.
  5. Add the onion to the beets and dress them with a little olive oil and vinegar.
  6. Season with salt.

The salad must first stand in a cool place for at least 1 hour so the flavors can meld. The salad prepared this way can be eaten practically every day; due to its low sugar content it is also very suitable for those who are dieting.
