Tomatoes, cucumbers and peppers – all of these belong to the vegetables that make a great salad. The problem, however, is that only those that grew in the sun retain their flavor. Store-bought tomatoes in winter are usually tasteless and, unfortunately, low in vitamins. But in season – especially if you grow the vegetables yourself – there are plenty of them and they taste great. And that should be taken advantage of! You can also use the preparation of this salad as a way to extend the shelf life of your vegetables.
Ingredients
Here is everything you will need to prepare the salad:
- 2.5 kg tomatoes,
- 1 kg cucumbers,
- 700 g peppers,
- 800 g onions,
- 1 head of garlic,
- 40 g parsley,
- 40 g dill,
- 40 g basil,
- 2 tablespoons salt,
- 150 ml sunflower oil,
- 5 tablespoons sugar,
- 5 tablespoons vinegar.
Preparing the vegetables
First, you need to thoroughly wash and chop all the vegetables. Slice the tomatoes, cut the cucumber into rounds or half-rounds, cut the peppers into strips or dice, and slice the onion into strips. It is better to cut larger pieces of vegetables rather than smaller ones – so they do not fall apart.
Marinating the vegetables
Place the vegetables in a sufficiently large bowl and mix them. Then add all the herbs – parsley, dill and basil, chopped finely, 2 tablespoons of salt, 5 tablespoons of vinegar and 5 tablespoons of sugar. Mix well again and let rest for an hour. During this time they will release juice. Pour in 150 ml of oil.
Fill the jars
Fill the jars with this mixture and distribute the juice released by the vegetables evenly among the jars. If the jars were half-liter, sterilize for 20 minutes. You can use this salad as a side dish anytime – in summer or in winter.
Final tips
If you do not like any of the vegetables, you can omit it. Essentially, it is possible to use this recipe with just two types of vegetables: tomato and onion. Any additional vegetables are a welcome bonus that enlivens the dish. Vegetables prepared this way can also be a great base for sauces.
