Your cheese won’t leak
The key is to buy a good cheese for frying. That is one that has a higher fat content – at least 30%. Such cheeses are creamier and hold their shape much better.
Before you start breading, put the cheese in the freezer for 10 minutes. After breading it is recommended to put it in the refrigerator for a few more minutes.
When breading, be sure to follow this step: coat the cheese twice – that way you’re sure it won’t leak
Fry ALWAYS only when the oil is well heated. Fry the cheese about 1 minute on each side and then dry it with a paper towel.
To give the chicken a golden crust, baste it during baking with dark beer – at the same time it will also add great flavor.
