And that is because they do not know how to make steaks and are unfamiliar with other preparations. Inspiration from Brazil

If you think that the recipe for roasted beef is a rather unconventional recipe, then you are right. Here, of course, the steak variant still clearly dominates, or the variant where the meat is stewed and boiled and subsequently part of sauces. Preparations involving roasting are mainly associated with Brazil, where it is a highly sought-after delicacy. Usually the meat is roasted on large skewers directly over the fire and then carved onto customers’ plates. Similar restaurants can be found here as well, which only confirms that the recipe for roasted beef is becoming an increasingly popular dish. Let’s look together at how to prepare it at home according to typical Brazilian recipes.

What will you need?

Ingredients are fundamental. Since it is necessary to preserve primarily the taste of the meat itself, it is appropriate to adhere to our list of ingredients. These are a guarantee that the recipe for roasted beef will taste exactly as it should. Have the following ready.

  • 1 kilogram of whole beef
  • 100 milliliters of apple cider vinegar
  • 200 milliliters of white wine
  • 100 milliliters of oil
  • 5 sprigs of rosemary
  • 10 black peppercorns
  • 1 kilogram of salt

First, prepare the marinade

The first step is to prepare the marinade in which you will soak the meat. From the ingredient list it is quite clear that this is an unconventional marinade and not the classic oil with spices used for other types of meat. For the roasted beef recipe, the marinade is liquid and slightly sour. Its preparation is extremely easy, as you simply pour all the ingredients into a pot. Then start heating the marinade and stir it gradually. This ensures that all the flavors meld much better and also begin to release more easily. Then turn off the stove and place the marinade to cool in the refrigerator. The goal is for it to be cold and for the marinade to be only a few degrees when you put the meat in.

Marinate the meat

Once the marinade has the desired temperature, it is time to start marinating the meat itself. It should first be thoroughly washed and then it should also be thoroughly dried. Then carefully place it into the marinade. It is important that it is completely submerged, which will ensure that the marinade penetrates it from all sides. The shortest possible time is marinating for 2 hours. If you leave it in the marinade for several hours longer, it is not a problem. However, we always recommend turning it halfway through the marinating time.

Create a salt crust

How to do it? It is very simple. Basically, you just need to take a smaller baking dish and line it with parchment paper. Then remove the meat from the marinade and immediately place it into the dish on the parchment paper. Take a second sheet of parchment paper and cover the meat with it. It should adhere perfectly to it, which is the desired state. On top of it pour the salt so that it perfectly covers the entire area where the meat is. This salt crust will ensure the optimal doneness you want to achieve.

Place in the oven

Now comes the final phase, which involves simply placing the meat in the oven. You should heat it first to the optimal temperature of 200 degrees Celsius. Since this is a higher temperature, it will be possible to shorten the preparation time. Your roasted beef should be ready in about 30 minutes from the moment you put it in the oven.

After taking it out try to have it come into as little contact with the salt as possible. While still hot place it on a cutting board and start slicing it into thin slices. If necessary, you can season them with coarse salt or pepper and serve immediately while they are hot.
