The apricot season is in full swing, which means it’s time to prepare the most delicious preserves, jams, compotes and pies. I remember how my grandmother prepared apricot jam every summer, its flavor so exceptional that it soon became a favorite recipe throughout the village. Today I will share this old family recipe with you that you will love too.
Ingredients:
- 4 kg ripe apricots
- 1.2 kg granulated sugar
- sodium benzoate (for preservation)

Preparing the apricots: First, thoroughly wash the apricots. Then cut them in half, remove the pits and cut away any rotten or unsightly parts.

Grinding the fruit: Grind the halved apricots until a smooth fruit mass is formed. Transfer this mixture to a large pot or kettle in which you will cook the jam.

Cooking the jam: Add the sugar to the ground apricots and mix thoroughly. Then add the sodium benzoate, which will ensure a longer shelf life for the jam. Cook the mixture over low heat until it reaches the desired consistency. Remember to stir often so the jam does not burn.

Preparing the jars: Thoroughly wash the canning jars and let them dry.

Filling and preserving: Pour the finished jam into the prepared jars up to the rim. Seal the jars tightly with lids and turn them upside down for a few minutes. Then wrap them in a warm cloth for 2-3 days so they cool slowly.
