Health benefits of lemon balm:

Ingredients (approx. 1.5 liters of syrup):
- Leaves from 30–35 long lemon balm stems
- 750 g of granulated or cane sugar
- 20 g of citric acid
- 1.75 liters of boiled and cooled water

Preparing the leaves
Remove the lemon balm leaves from the stems and place them in boiled, cold water. Leave the container with the leaves to steep in a cool place for 2 days. -
Cooking the syrup
After two days, strain the infusion and pour the liquid into a pot. Add the sugar and citric acid and bring the mixture to a boil. Once it starts boiling, cook for another 5 minutes. -
Filling the bottles
Let the syrup cool for a while, then pour it into clean jars or bottles. Store in the refrigerator.
Usage:
You can add this lemon balm syrup to tea, lemonades, or desserts as a natural sweetener. Before bedtime, put a teaspoon of the syrup into your tea – lemon balm will help you fall asleep faster and sleep peacefully.
